Pepperoni Zucchini Pizza Slices

My favorite season is here; Football season. Go Texans! We all tend to go food crazy on football Sunday, at least in this house; pizza, nachos, wings, French fries, and all the yummy fried foods. This is a healthy alternative to pizza and it tastes delicious! You can also experiment and add your own favorite toppings; bell peppers, Italian sausage, bacon, mushrooms, or whatever you love!

 
Ingredients:
Olive oil
2 large zucchinis, sliced into 1/2 inch pieces
Marinara sauce
Shredded Italian cheese mix
Mini pepperoni
Salt & pepper
Italian seasoning

Directions:
Preheat oven to 375
Lightly oil a baking pan with olive oil; I put a little on a paper towel and spread it that way. Place zucchini slices into pan. Lightly oil the top of the each piece and add salt and pepper to taste. Put a nickel sized drop of marinara on each piece, maybe smaller or larger depending on the size of zucchini. Sprinkle cheese on each piece and then place 2 to 3 mini pepperonis on each slice. Press down to spread out the marinara. Season with Italian seasoning blend. Bake in oven for 25 minutes or until cheese is melted and golden brown. Enjoy!
