Mexican Quinoa Skillet


Looking for a quick, easy, healthy, and protein packed meal? Here it is!!!! I love this meal and my toddler can’t get enough.

1 lb lean ground beef
1 cup uncooked quinoa
1 cup corn
1 can black beans, drained and rinsed
1 can diced tomatoes
1 cup water
2 tablespoons chopped cilantro
1 lime
1/2 teaspoon cumin
Garlic powder, salt, and pepper to taste
2 tablespoons taco seasoning (I use about half a packet of mccormick’s taco seasoning)

Cook ground beef until browned; add taco seasoning and 1/4 cup water, stir until mixed.
In a separate skillet, add 1 cup water, quinoa, corn, black beans, tomatoes, cumin, garlic powder, salt and pepper. Cook on medium heat, bring to a boil, reduce heat, cover and simmer for 20 minutes. Mix in beef and add lime juice from one lime. Top with cilantro. Enjoy!

Extra Options:
You can also do this recipe without the beef, just add more seasonings to your quinoa mixture, like chili powder or red pepper flakes, maybe cayenne to give it more heat, or simply add a tablespoon or 2 of taco seasoning!
Many people love avocado, so you can top it with that as well; I enjoy it with a bit of avocado ranch salad dressing.
