This is a tasty and healthy meal prep recipe I found on FitMenCook. I switched the original recipe up a quite a bit since I found the red onions overpowering and the taste a little bland.
24 oz rotisserie chicken (this is about 1 chicken)
1 cup quinoa
3 cups low sodium chicken broth
2/3 cup yellow onion (diced)
Seasonings to your liking!
Rinse quinoa and boil it in a saucepan with chicken broth and yellow onion. You can also add your seasonings at this point, I added garlic powder and black pepper to mine. Stir and then lower to a simmer. Cover for 15-20 minutes. While this is cooking, remove skin and break chicken meat into small pieces. Once the quinoa mixture is done, stir in chicken until well mixed. Top with green onion slices! Enjoy.
