So I saw Starbucks introduce egg bites that looked absolutely delicious, so I decided to try making some myself. They came out perfect! The combination of cheese along with the fluffy texture made them hard to put down. My 2 year old was even begging for more! What is so great about this recipe is how customizable it is. You can add pretty much anything! Tomatoes, bell peppers, onions, different cheeses, sausage, or bacon to name some examples. Perfect for even the pickiest eaters. They work well for breakfast or brunch get togethers.
1/4 cup milk
1.25 cups shredded cheddar cheese
1 cup spinach, roughly chopped
Salt and pepper
Preheat oven to 350. Spray a muffin pan with non-stick cooking spray.
In a medium bowl, beat eggs, milk, and salt and pepper to taste.
Mix in cheese and spinach.
Spoon mixture into the muffin pan. Filling each hole 2/3-3/4 full. This should yield 10-12 egg bites.
Bake for 20-25 minutes or until lightly brown on the edges.
