I have days where I just really do not feel cooking or my time is limited. This is a super simple Slow Cooker recipe that will keep you on your diet without taking up your time. The only work involved is chopping the onion! Just throw everything in and go.
2 lbs boneless chicken breasts
1 box red pepper and tomato soup
1 box low sodium chicken broth
2 cans beans of your choice, drained and rinsed (I used black beans)
3 cups frozen corn or 2 cans, drained
1 can diced tomatoes
1/2 onion, diced
1/2 packet of fajita or taco seasoning
1/2 TBS Cayenne seasoning if you want some spice
Shredded cheddar cheese
Optional/not pictured: tortilla chips
Place chicken breasts in Slow Cooker. Pour seasoning on top of chicken and then pour in your soup and broth. Add onion, corn, tomatoes, and beans. Cover and put on a low setting. I did 10 hours. When done, serve topped with cheese and tortilla chips (optional). Enjoy!
